Maltol is an organic compound, with a pleasant smell of cooked sugar, found in nature (especially in cocoa). Maltol has been isolated from larch bark, pine needles and solid extracts of licorice roots. It is formed during the roasting of the malt from which it takes its name - Maltole. For its use in perfumery, maltol is produced by synthesis. Ethyl maltol is a more potent version of maltol. Aromas of caramel, toasted bread and hazelnut. It is used to recreate the mouth-watering notes of pralines, cakes, chocolate, etc... Ethyl maltol brings its mouth-watering effect by giving caramel, pyrogenic, vanilla facets in woody, floral and above all fruity notes,
bringing hold, character and sensuality.
